Humidity drawers: what they do and when they stop doing it
A crisper slider does exactly one thing: it opens or closes a small vent between the drawer and the rest of the refrigerator compartment. Closed, the moisture produce gives off stays in the drawer and leaves keep their water instead of wilting. Open, that damp air escapes along with the ethylene ripening fruit gives off, so apples and pears do not push everything near them over the edge. There is no separate cooling system in a crisper and, on most built-ins, no electronics either, which matters because when a drawer stops keeping produce it is usually not the drawer that failed.
What the slider actually moves
The drawer is a close-fitting box with a vent in it, and on most built-ins the glass shelf above is part of its lid rather than a separate shelf. Slide the control one way and the vent closes, so the water produce transpires stays with the produce, which is all high humidity means. Slide it the other and the vent opens to the compartment, letting damp air and ethylene out. Labels vary between models and generations, and some show a picture of an open and closed vent rather than the words, so read the drawer instead of assuming from where the slider sits. Two things follow: a shelf that is not seated, or a drawer packed so full it cannot close, defeats the setting entirely.

Which produce belongs in which setting
The split is between things that wilt and things that rot. Anything that loses its shape by losing water belongs behind a closed vent; anything that spoils when it stays wet, or that ripens everything near it, belongs behind an open one. The rest of the rule is ethylene. Apples, pears, stone fruit and avocados give off a lot of it, while leafy greens, broccoli and asparagus are unusually sensitive to it, and a bag of greens sharing a closed drawer with a bowl of apples yellows within days for reasons that have nothing to do with the refrigerator.

The ways a humidity drawer genuinely fails
Real drawer faults exist and they are mechanical. Sliders crack or go missing after a cleaning, and a vent stuck open explains wilted greens on its own. Rollers and rails wear, so the drawer rides low, sits proud of the frame and no longer closes against its stop. Drawer fronts on units with custom panels pull out of line for the same reason the main door does, which is weight. A glass shelf taken out for cleaning and put back a little forward leaves a gap along the back that no humidity setting overcomes. All of these are parts and adjustments rather than refrigeration work, and you can see every one of them with the drawer pulled out and a flashlight.
- A cracked, jammed or missing slider
- Worn rollers or rails leaving the drawer sitting low
- A drawer front out of line, or one that no longer closes flush
- A glass shelf above the drawer not seated all the way to the back
When the drawer is not the problem
If both drawers have stopped keeping produce, and greens wilt whatever the slider is set to, look at the compartment rather than the drawer. A door gasket that no longer seals lets a slow stream of room air in all day, and everything inside then sits in air the machine is permanently trying to dry. An evaporator iced over because the defrost cycle is not finishing does the opposite: airflow collapses, the compartment runs uneven, and the drawers get what is left. A thermistor that has drifted means the compartment is not at the temperature the display claims, and produce is the first thing in the cabinet to report it.
- Test the door seal with a dollar bill at several points around the frame
- Look for frost on the rear wall, or a coil furred with ice behind the interior panel
- Compare a thermometer at shelf level against the number on the display
Produce freezing at the back is a different fault
Frozen lettuce is not a humidity problem and, on a Sub-Zero, it is not cold air arriving from the freezer either. These units run dual refrigeration: two sealed systems, two compressors, two evaporators, and no air passing between the freezer and the fresh food side at any point. That is the entire point of the design, and it is why somebody trained on single-compressor refrigerators can lose an hour hunting for a damper between the compartments that was never there. Freezing in the fresh food section means that section is running colder than it should. Produce pressed against the air discharge, a setting nudged down over the years, or a sensor reading high and driving the circuit too hard will all do it.
Habits and parts, and what each is worth
Drawer parts sit at the cheap end of this equipment. Sliders, rollers, rails and drawer fronts are ordinary components, still available for units far older than owners expect. Gaskets and hinge adjustment cost more but stay in the same category. The refrigeration faults behind a compartment that has stopped holding produce, a defrost circuit or a drifted sensor, are a service call rather than a part you order. Habits matter more than any of it: do not put greens away wet, do not seal produce in bags with no air unless the bag was made for it, do not pack a drawer past the point it can close, and wipe it out after a spill, because the smell stays in the plastic. Should the slider be open or closed for high humidity?
Closed. High humidity means the vent between the drawer and the compartment is shut, so the water the produce gives off stays with the produce. Labels differ between models and some show a picture of a vent rather than the words, so read the drawer itself rather than guessing from where the slider sits.
Why is there water in the bottom of my crisper drawer?
A little condensation in a closed drawer is normal and means the vent is doing its job while the produce transpires. A pool is not. It usually means produce went in wet, the drawer is over-packed, or the whole compartment is carrying more moisture than it should, which points at a door seal.
Can I just set both drawers to high humidity?
You can, and the fruit will pay for it. Apples, pears and stone fruit give off ethylene, and holding that gas around them in a damp closed box ripens them quickly and then takes the greens down with them. One drawer closed and one open is what the two settings are for.
